"Red yeast rice" (*beni-koji*) is derived from a type of *koji* mold—related to the cultures used for sake and miso—and is used in the production of beverages such as Shaoxing wine. The functional ingredient it contains, "red yeast rice polyketides," helps inhibit the body's production of cholesterol.
